Quick Prep Potato Stir-Fry

Serves: 8 - Calories: 77 (Full Breakdown)


  • 2 Tbsp coconut oil

  • 1 cup finely sliced onion

  • 3 Tbsp fresh chopped ginger

  • Touch of black pepper

  • 2 pinches of sea salt

  • 1 cup chopped red bell pepper

  • 8 medium potatoes


  • Heat a large skillet, or pan, over a medium flame. Once hot, add oil, onion, ginger, black pepper and sea salt. Saute for 3 minutes. Onions should become slightly translucent.

  • Add the red bell pepper and a tad more salt. Saute for 3 more minutes.

  • Add the potatoes and another little pinch of sea salt.

  • Mix well.

  • Reduce heat and saute for about 20 minutes stir occasionally as ingredients should not stick.

  • Serve as a side to a veggie filled lunch, or dinner.
